Ingredients:
Basmati rice - 1 cup
Green garlic - 1/4 cup finely chopped
Green onions - 1/4 cup finely chopped
Methi leaves - 1/4 cup finely chopped
Capsicum - 1 no
Beans - 100 gms
Peas - 100 gms
Carrot - 1 no
Fresh coriander - 1/2 cup finely chopped
Mint leaves - 8 - 10 leaves
Green chillies - 2 nos
Grated coconut - 1/2 cup
Jeera powder - 1 tea spoon
Garam masala - 1 tea spoon
Ghee - 2 table spoons
Cloves - 4 nos
Cinnamon stick - 1 inch long finely broken
Salt to taste
1. Wash and soak rice in 1 1/2 cups of water for 20 mins.
2. Grind chopped coriander, mint leaves, green chillies and coconut into paste with as little water as possible.
3. Wash, dry and cut green onions, green garlic, mint leaves, beans and carrot into 1/2 inch long pieces.
4. Add the peas, ground paste salt, jeera powder, garam masala powder and salt enough for the vegetables and mix thoroughly and keep it aside for 15 - 20 mins.
5. Heat ghee in a kadai and add the cloves and cinnamon sticks.
6. Once they turn brown add the vegetable mixture.
7. Keep stirring the vegetable till the raw smell goes away.
8. Now add the soaked rice along with the water and balance salt.
9. Cook together till both rice and vegetable are done.
10.Green kichadi ready.
