Carrot rice

Ingredients: 


Rice                    -  1 cup
Carrot                 -  2 nos
Onions                -  1 no  (big)
Green chillies       -  1 nos
Pepper powder   -  1 tea spoon
Jeera powder      -  1 tea spoon
Red chili powder -  1 tea spoon
Garam masala     -  1 tea spoon
Mustard seeds    -  1 tea spoon
Black gram dal    -  1 tea spoon
Ghee                   -  2 table spoons
Salt to taste


1.  Wash and soak rice for 1/2 hr.
2.  Cook rice and spread in a plate and let it cool.
3.  Grate carrots and finely chop onions and green chillies.
4.  Heat ghee in a kadai and add the mustard seeds and black gram dal.
5.  Once the mustard cracles and dal turns golden brown add the finely chopped onions and green chillies.
6.  After the onions turn transparent add the grated carrots, salt, pepper powder, jeera powder, red chili powder and garam masala.
7.  Mix well and allow it to cook for 5 mins.  Thats all it takes for carrots to cook.
8.  Add the carrot mixture to the cooled rice and mix well.
9.  Carrot rice ready.  Serve with raita and papad.
