Mint Paneer pulao

Ingredients:

Basmati rice           -  1 cup
Mint leaves            -  2 table spoons finely chopped
Coriander leaves    -  2 table spoons finely chopped
Green chillies          -  2 nos finely chopped
Onions                   -  2 nos
Paneer                   -  100 gms
Ghee                      -  3 table spoons
Mustard seeds        -  1 tea spoon
Jeera powder         -  1 tea spoon
Sugar                     -  1/2 tea spoon
Garam masala        -  1 tea spoon
Salt to taste

1.  Wash and soak rice in 1 1/2 cups of water for 20 mins.
2.  Drain the water from the rice and keep it separately.
3.  Wash coriander leaves and mint leaves and finely chop.
4.  Heat a thick bottomed dish and add the ghee.
5.  Add the mustard seeds and once it crackles add the finely chopped onions.
6.  Once the onion turns transparent add the rice and stir for a few mins.
7.  Once the rice starts turning light yellow colour add the finely chopped coriander leaves, mint leaves and green chillies.
8.  Keep stirring in regular intervals for 5 mins and then add the drained water, jeera powder, garam masala powder, diced paneer, salt and sugar.
9.  Cover the dish and cook till the rice is done.
10.Mint paneer pulao ready.
