Tomato Fried Rice

Ingredients:


Basmati Rice         -  200 gms(1 cup)
Tomatoes              -  4 Large ones
Onions                  -  2 Large ones
Green Chillies        -  2 nos
Ginger                   -  1 inch
Garlic                    -  6 pearls
Ghee                     -  3 table spoons
Cinnamon stick      -  1 inch stick broken into small bits
Jeera                     -  1 table spoon
Cloves                  -  3 nos
Tej patha               -  1 nos
Pepper powder      -  1 table spoon
salt to taste, a pinch of sugar and coriander to garnish.

1.  Wash and soak basmati rice for 15 mins.
2.  Soak in 1 1/2 cups of water.
3.  The same water is to be used to cook the rice.
4.  Chop onions, tomatoes and green chillies.
5.  Clean garlic and ginger and make it into a paste.
6.  Heat ghee in a pressure cooker.
7.  Add the cinnamon pieces, cloves, jeera and tej patha.
8.  Once they turn into golden brown, add the onions and green chillies.
9.  Once the onion turns transparent add the ginger garlic paste.
10.After stirring for a few mins. add the chopped tomatoes.
11.Also add salt, pepper powder and a pinch of sugar.
12.Drain the water from the rice and keep it aside.
13.Add the rice and gently stir the rice along with the tomato mixture.
14.After 5 mins add the water you kept aside(drained from the rice)and stir well.
15.Close pressure cooker and cook till done.
16.After opening the cooker transfer it into a bowl and garnish with finely chopped coriander.
